I’d like to know whether a cellphone gets 3 years of updates in the store, and some have 6 years of updates

Is the date counted from the day of the invoice or from the manufacturers’ warranty period?

Manufacturer’s timeline.

Phone released in 2025, with seven years of guaranteed updates, will receive updates through 2032, regardless of whether it is sold in 2025, 2030, or 2035.
